Caramelised Onion, Garlic, Ginger and Chilli Jam

For our very first blog on our brand new website, we wanted to give you something special. Here’s a delicious little treat from our very own Director, Paul Owen. Use it the next time you’re entertaining, we guarantee it will be a winner.


70g butter
4 large red onions
8-10 cloves of garlic
1 table spoon of grated ginger
½ cup of brown sugar
¾ cup red wine
¼ cup balsamic vinegar
2-3 red chillies chopped
2 table spoons of chopped fresh coriander
2-star anise


Melt the butter in a large saucepan over a medium heat and sauté onions, chilli, garlic and ginger for 10 minutes or until browned.
Stir in sugar and continue to cook until liquid becomes syrupy.
Add red wine, coriander, balsamic vinegar and star anise to mixture and stir.
Simmer uncovered, stirring occasionally for 30 minutes until jam thickens.

You should now have an amazing jam with a mix of sweet, savoury and spicy flavours.
Ideal to serve with roast and bbq meats.
